The roe is large, terse, well defined and pure in flavour.Organic caviar is ideal to consume alone , with a spoon to discover its complexity. Its freshness and flavour are the insignia of a caviar which is conquering even the most exquisite palates.
The Acipenser naccarii, the sturgeon we breed, is a native species, almost extinct which we have managed to recover in captivity. Having been around for 250 million years, it is a live fossil, which grows slowly and whose caviar (an authentic jewel) which we extract after 18 years of rearing, on average, is full of nuanced flavours and colour.
It is usually pearly grey in colour, but different reflections may appear. The freshness of our caviar, which we guarantee, will mean that the flavour and nuances will not be disguised by the passing of time, salt or preservatives.
