Following traditional Iranian recipes, we make a mature caviar, with a strong preservative and intense flavour, presenting a creamier texture. We combine the best qualities of the caviars of the Caspian sea with the unbeatable raw material of Riofrío.
The Acipenser naccarii, the sturgeon we breed, is a native species which is almost extinct and which we have managed to recover in captivity. Having been around for 250 million years, it is a live fossil, which grows slowly and whose caviar which we extract after 18 years of rearing on average, is an authentic jewel.
It is usually pearly grey in colour, but different reflections may appear.
