Sturgeon and onions

Recipe for sturgeon and onions | Secrets | Caviar de Riofrío


  • 250 g sturgeon, diced
  • 2 medium white onions, cut in julienne strips
  • 30 ml white wine
  • 1 clove of garlic, sliced
  • 30 g extra virgin olive oil
  • 150 ml water
  • 1 g paprika
  • 1 laurel leaf
  • Dry oregano leaves

How to make it:

  1. Heat the extra virgin olive oil in a frying pan. Throw in the garlic.
  2. When the garlic starts to brown, add the onion.
  3. When the onion is tender, add the sturgeon and wait for it to brown on all sides.
  4. Add the spices, water and wine. Let it boil and set aside.
  5. Ladle into a soup dish. It may be served with mashed potatoes.
